A chef at the chemical company Henkel cooks in the soup kitchen of a Franciscan monastry. A trainee from the IT company Mikado explains the internet to senior citizens. And all at the companies’ expense. The concept is called “Corporate Volunteering.” The idea comes from America and is the quintessential win-win situation. When a company asks its employees to do volunteer work, it’s not only society that benefits. The company derives something from the arrangement too, if an employee who feels valued for his or her contribution gives more at work as well. www.pouchfriendly.com Chicken a la King 8oz boneless-skinless chicken breast (cooked, chopped) 1 can Cream of Chicken Soup 1/4 cup skim milk 1/2 teaspoon Worcestershire sauce 1 tablespoon Real Mayonnaise 1/4 teaspoon ground black pepper 2 cups frozen peas (thawed) 1 cup frozen sliced carrots (thawed) 4 slices whole-wheat bread (toasted) Combine the soup, milk, Worcestershire mayonnaise and pepper in a saucepan. I just love the host, he cracks me up. Did you see the one last week with the guy from the soaps in the thong? Well, it turns out that was NOT a thong. His shirt had tucked in funny and he was so paranoid that he demonstrated how it happened on The View.

I’ve come up with a way to eat extremely healthy food without all the faffing around involved with preparation. HERE’S A BASIC RECIPE… 1. Add whatever vegetables you have available to a large cooking pot (roughly cut) 2. Remember to Include potatoes if you want it to be creamy. 3. Add legumes (split peas/ lentils etc) and/or beans for protein (you may need to pre-cook these first as the vegetables will generally only need about 20 minutes of simmering time, but some legume’s and beans require longer.) 4. Add salt & pepper to taste. 5. Top up with water (preferably filtered) so the vegetables are covered, plus a bit more. 6. Bring to the boil, then simmer for about 20-25 minutes untill all the vegetables are soft. 7. Allow to cool, then scoop into a blender and liquidize to the desired texture. 8. Throw your microwave in the bin and heat in a saucepan, stirring with woodden utensils only. Serve with warm, freshly baked whole-grain bread spread with organic butter, Yummy! Process all of the soup and pour into 3 or 4 non-plastic bowls. keep in the fridge and freeze any that you will not use within 2 days. .

The next day, I got ready for my next excursion… a trip to “Kumasi”, the capital of the traditional land of the Ashanti people (or “Asante” in the native language). We have all heard of the word “Ashanti” either through music or the media. They are actually an ethnic group that lives in present day Ghana. They have a King that is the symbolic head of the kingdom. The monarchy is based on matrilineal descent, and the King and his Mother (the Queen Mother) rule in a quasi co-regent status. Since it is matrilineal, the King’s son does not take over the thrown when he passes. It is his sister’s son that becomes King and the sister rules with her son as the Queen Mother. On our way to Kumasi from Accra, you pass some of the most beautiful mountain forests. We passed the house of the wife of the late Bob Marley. She moved to Ghana from Jamaica and now calls Ghana her home. It was a large house with a gate in front that had an image of Bob Marley singing, it was great. We then stopped at a Master weaving shop in a town called “Bonwire” near Kumasi. The traditional cloth of the Ashanti is the Kente Cloth. Men are traditionally only allowed to do the Kente weaving and women are discouraged from weaving. I was shown how the weaving was done, using the hands to thread the cloth and the toes of the bare feet to alternate between threads. It’s an art form, and many of the cloths are colorful with yellows, reds, oranges and other colors in geometric shapes. It is woven in long strips …
